Are your mornings hectic? Trying to get the kids ready, fed, and out the door on time. Do you ever skip your breakfast because you are taking care of everybody else? These make ahead breakfast burritos are perfect for you. They are a no fuss morning meal packed with protein to fill you up so you can make until lunch time.
I made the breakfast burritos after putting together breakfast over the weekend when I have a little bit more time as compared to the weekdays. I was making an egg, cheese and ham dish and just decided to scramble a bunch more eggs, shred more cheese and chop up some more ham.
My boys linger over their food at meal times, where as I eat and go on with chores around the kitchen as they finish up. This weekend was no different. As they were debating the need to play “farm and horse” or “build Lego’s.” I was putting together my breakfast burritos.
Easy and quick to put together
Seriously very little instruction is needed to make these breakfast burritos. Of course you can make these fancier with sauteed onions and peppers. Any additions are fine and will only make the burritos tastier. Remember the point of this is to have a simple solution for busy mornings.
- Open up a tortilla.
- Scoop some eggs on the tortilla.
- Scoop some ham on the tortilla.
- Sprinkle some cheese on the tortilla.
- Add salsa or sriracha for a little extra flavor if you are so inclined.
- Wrap up the burritos and place them into a freezer safe bag.
- Suck the air out of the bag, I use the straw method.
- Pop them in the freezer.
Now when you don’t have time to feed yourself or your husband you can grab a breakfast burrito out of the fridge. Pop it in the microwave and not starve just so you and your kids don’t run late for the rest of the day!
