Creamy Chicken and Rice Casserole

This comfort food casserole made with left over chicken has become a family favorite in our home. The creamy goodness of this recipe and the combination of flavors works so well. The creation of this recipe came out of necessity. I needed to get some food on the table for dinner after work and just used what was available. Started with left over chicken I had roasted a couple days earlier and it grew from there.

We had a few noodle dishes already this week so I was in the mood for something different. Decided to go with rice. I have a couple picky eaters in my house, D-Man who has food allergies and is six years old likes his food a certain way. He likes rice plain and little to no spice on his food. Big-C who has Down syndrome and is 4 years old, likes flavor, and will eat items that he has tried before. He is hesitant when things looks different and needs some convincing to actually take a bite. In addition if Dad and D-Man both like the dish, Big-C is even easier to convince to try it!

I found about a cup of sun dried tomatoes just waiting to be used up. In the fridge was a few strips of bacon (who am I kidding, there is always a few strips of bacon in my fridge). Well what goes good with bacon and and tomatoes? We had avocados and to add a creamy punch some cream cheese would do the trick. There you have it the ingredients for a creamy delicious casserole: chicken, bacon, tomatoes, avocado and cream cheese.

Creamy Chicken and Rice Casserole


  • 2 cups chicken, cubed and cooked
  • 1 onion, chopped
  • 1 cup sun/oven dried tomatoes, chopped
  • 1-2 avocados, peeled and diced
  • 8 ounces cream cheese, softened
  • 5 strips crispy bacon
  • 2 cups cooked rice, we use Jasmine
  • salt and pepper
  • olive oil


  1. Begin cooking the rice in a pot. You will be adding the rice and water to the rest of the mixture before the rice is fully cooked.
  2. Heat oil in large pan over medium high heat and add onion, and cook until softened.
  3. Add chicken and tomatoes, heat for 1-2 minutes. Reduce heat to medium.
  4. Add cream cheese and stir until evenly combined and add avocados.
  5. The rice should be about 75% cooked. Add the rice and water to the mixture. Stir until combined, lower the heat to medium low. Simmer with the lid on the pan until the rice is fully cooked.
  6. Add half the bacon to the casserole at the finish and top the dish with the remaining bacon. Salt and pepper to taste. Serve warm.


I don't like to add the avocados too early to avoid them being smashed up. Also if they are not quite ripe that is okay, heating them in the pan will soften it up.

If your bacon is not cooked ahead of time, make the bacon in the pan first and remove to drain. Use the left over grease for your onions.

This is a very filling dish that is by no means low in fat. To even out our indulgence a little we paired it with some fresh fruit. All the ingredients were mixed together therefore the kids were initially suspicious of this casserole. After a couple of hesitant bites the dishes were well cleaned, the husband went back for seconds and we all earned our dessert! In our family if you finish your meal you get a dessert.
