This salad is by far one of my favorites. I love it for it’s color, ease to put together and the fact it does not have lettuce in it. Yep I’m not a fan of lettuce being the main ingredient for my food. I will eat it on a burger, in a soup or to accompany a sandwich. I like salads that are colorful, have good texture, and don’t have lettuce as the main ingredient . The avocado, chick pea and tomato salad has basic ingredients and a freshness that if very appealing.

Below is the basic recipe for this simple salad. I like to jazz mine up with this great blood orange infused olive oil from Driftless Glen Distillery. I received it as a gift from my mother-in-law and love the orange undertones it adds to the recipe. In addition I like to add some fried bacon bits or red onion to up the flavor.

I know there are more pictures than necessary but I just love the look of this salad.

Avocado Chick Pea & Tomato Salad

Avocado Chick Pea & Tomato Salad


  • 1 avocado
  • 2 Roma tomatoes or 1 cup of grape tomatoes sliced
  • 1 can of chick peas, rinsed and drained
  • 3 Tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup of bacon (optional)


  1. Chop up the avocado and tomatoes to be about the same size of the chick peas.
  2. Combine all ingredients and toss gently, not to mash the avocado.


*due to the nature of avocados either chill and serve within the day or toss the avocado with some lime/lemon juice to stave off oxidation


Like all foods the fresher the ingredients the better the result. If you grow your own tomatoes use themĀ  or pick the ingredients up at the nearby farmer’s market. Remember all of my recipes are free of allergens that may set off my son, this one also is free of a few other common allergens. This salad is dairy free, egg free, peanut free, tree nut free, cucumber free, and seed free.

  1. Oh wonderful. Your recipe looks like another way I will be able to include avocado in my diet. I too like colorful foods. I love Roma tomatoes, and chick peas. Avocados, not so much until…lately! I live a plant-based lifestyle, so veg and fruit is major. I know that not all veg will suit my “texture” requirements. Avocado is one, until…the one day I attended a luncheon, where the restaurant was serving avocado and corn soup. I didn’t have any that day, but I made sure to include all the ingredients I saw in the one a lunch mate ordered, my next grocery run. Delicious! Now I’m going to use your recipe, and just like that my question thrown out into the Universe will have come back successfully answered. I can eat healthier as a result of including avocado in my diet in a form I can ingest. I love soup and salad. Hurrah and thanks for including this recipe on your blog!
